365 Project: Day 154 (Sweet Potato Soup)

I’ve been craving soup lately, I guess it’s a winter thing. I like sweet potato soup for many reasons, one of them is that it’s so easy to make. You don’t even have to cut the vegetables into small pieces:5 minutes preparation, 40 minutes or so on the stove - mash it all up using a stick blender, and you’re done!

If you really feel the need for a recipe - here it is:

Materials:
2 potatoes
3-4 sweet potatoes
2 carrots
1 piece of pumpkin
1 onion
small amount of oil/butter
spices to taste (cumin, cinnamon, nutmeg, salt, pepper)

Instructions:
Peel all the vegetables and cut them into pieces (they don’t have to be small, just so they all fit in the pot and cook faster).
Slice the onion and fry in a small amount of oil or butter. When the onion starts to turn brown mix in the spices.
Add the other vegetables.
Add enough boiling water to cover the vegetables.
Let simmer for about 40 minutes, until the vegetables are soft.
Turn off fire and mash the vegetables using a stick blender until smooth.
